About four years ago, I started my clean eating journey. I completed Whole 30, which was an awesome experience, but I really, really missed dessert. Now-a-days, I strive for mostly clean eating and I don’t fret too much if I overindulge or can’t say no to a delicious treat. Body Love by Kelly Leveque helped me heal my serious food guilt issues and now I find it way easier to eat clean. And if I reeealllyy want a treat, I try and find a healthier alternative. And so, these healthier fudge-y brownies were born!

WHAT YOU’LL NEED:
One package of Pamela’s Gluten Free Non Dairy Brownie Mix
1/2 cup of Thrive Culinary Algae Oil
Okay, you may be thinking I am insane right now, but seriously, this stuff is GREAT! It is tasteless, has a high smoke point, and is packed with healthy monounsaturated fats (the good kind of fats!). Don’t believe me? Read what Dr. Weil has to say about it. This stuff is great for cooking because of its high smoke point and is a great healthier alternative to vegetable oil typically used in baking.
One large egg
1/4 cup water
Optional: 1/2 cup of chopped walnuts or pecans
Preheat oven to 350 degrees
Combine all ingredients and mix, careful not to over mix
Pour mixture into a greased 8in glass pan
Bake for 32-35 minutes (mine took a few minutes longer)
Let them cool, cut into squares, and enjoy!
